Elizama Montalvo MD: On February 2020, the organization Slow Food International; extended a invitation to Puerto Rico, involving a community project called, Food & Health. Since Slow Food International’s goal is design to shine a spotlight on global communities, markets and networks; plus educate the value of organic & sustainable food. Alimentos Como Medicina (ACM): Puerto Rico was formulated from their request to engage farmers, chefs, concerned citizens and healers/doctors to collaborate and challenge our perception of food as medicine.
